A Simple Winter Warmer

When winter draws in and the nights are cold and dark you can’t help but be drawn to stodgy comfort food, in our house this is usually anything that involves potatoes and gravy!

Of corse the ultimate potato and gravy meal is stew and dumplings, and this is how I do it. I warn you there is nothing ground breaking or flashy about my method or recipe, but when you have a seven month old baby to look after you don’t want flashy you want quick, easy and nutritious!

Stewing steak
Two large onions
One swede
Two baking potatoes
Two large carrots
Frozen peas
Small punnet of mushrooms
Gravy granules
Self raising flour

Chop the onions and fry off with the steak in a frying pan for about five minutes
Chop all the veg, I don’t bother peeling the potatoes or carrots just chop them roughly and sling them in!
Put everything in a slow cooker
Cover with gravy
Stir in a good dollop of marmite
Leave in the slow cooker for 5 hours on high or 8 hours on low

For the dumplings:
Mix 50g Astoria with 100g self raising flour with a little water to make a rough dough, split into 8 dumplings, place into your stew pan for twenty minutes before you serve the stew.

Bish bash bosh one stew done! I like to serve it with red cabbage and thickly sliced tiger bread – amazing.

I also usually cook enough for us to have a second meal out of it the following evening, usually stew and chips : )
